Divine Chocolate Truffles

Again, these chocolate balls of goodness do not have any sugar!  Yay!  They do, however, contain agave nectar which you can omit if you would like and add honey instead.  Agave nectar and coconut oil is available at stores listed in The Grocery List.

I cannot stress how good these are!  They don’t take forever to make and they are great for the kids to help with.

This is a great Christmas recipe for a hostess gift or just to serve to your family and friends.  Great for you, fewer calories than those yummo rum balls and so easy to make!

The kids LOVE them because the are chocolate!  No sugar and packed full of healthy nuts, it keeps them energized and feeling full.

Chocolate Truffle Balls

1 1/2 cups cashews

1 cup dates

1 cup almond meal

2 tablespoons agave nectar, or honey

1 tablespoon coconut oil

1 tablespoon vanilla extract

1/2 cup cocao (you can substitute 100% cocoa, surprisingly Woolworths Homebrand is a good substitute!)

1/2 – 1 cup unsweetened coconut 

Soak the cashews and the dates (in separate bowls) in hot water for about an hour.  I can never wait that long but then I have troubles later on! So soak them for at least 45mins. 

Drain the nuts and dates and put them in the food processor.  The blender just doesn’t work that well because it is a hearty mix that needs the larger container of the processor. 

Add the almond meal, agave nectar (or honey), coconut oil, vanilla and cocao.

Pulse in the food processor until it forms a ball and there is little evidence of the cashew nuts.  Some chunkies are great, it adds to the texture.  It should be a big chocolate mass. YUM!!

Roll into little teaspoon balls then roll in coconut. 

No cooking required!

Store in an air-tight container.  Believe me, they don’t last that long!
